- 375 grams Pappardelle
- 100 grams Bacon diced
- 30 grams Butter
- 6 Eggs
- Olive Oil
- 50 grams Parmesan Cheese grated
- 100 grams Baby Spinach
- Salt and Pepper to taste

Instructions
- Cook pasta as per the packet directions, for 3-4 minutes. Add butter to a pan and fry 2 to 3 eggs at a time.
- In another pan, fry bacon, add olive oil to crisp it up. Add spinach to pan. Add some al dente cooked pasta into the pan and mix the bacon and spinach.
- Place the pasta on to a plate, cover it with the fried eggs and top with parmesan cheese. Season to taste.
